Baked Oatmeal

I got this recipe from a fellow twin mom and the little ones have been eating it every morning of their lives since they could pick up finger food.  They still love it!  I make a double batch about twice a week and keep it in the refrigerator.  My twins are 16 months and eat this with their fingers or a fork.  To serve, I cut it into about half inch cubes.

Preheat oven to 400 degrees

  • 2 cups quick cooking or old fashioned oatmeal (not instant)
  • 1 cup applesauce or 1 cup shredded apple
  • 1/4 cup brown sugar
  • pinch cinnamon
  • 1 egg
  • 2 1/4 cups of milk

In a large bowl, stir together oatmeal, applesauce, brown sugar and cinnamon.

In a large measuring bowl if you have one, crack the egg and beat.  Then pour in milk until it reaches the 2 1/2 cup measuring line.  If you don’t have a large measuring bowl, it is approximately 2 and a quarter cups of milk.  Beat the milk and the egg mixture until well mixed.  Pour milk/egg mixture into oatmeal mixture and stir well.  Pour into a 3 quart casserole dish.  The mixture will be thin except for the oatmeal and will only come up maybe a half inch in the dish. Bake at 400 degrees for 40 minutes.  Edges should be browned and top will be firm.
